Raw food Cashew ‘Cream’

If you’re enjoying the raw food lifestyle, crispy, cold, garden greens soon lose their novelty when the weather starts to turn cooler and you desire something a little heartier  like creamy soups, pizza, or pasta (shredded zucchini of course). Here’s a simple cashew cream recipe and how-to, plus a Zucchini recipe.

Cashew Cream

  • 1 cup cashews, soaked overnight, drained and rinsed
  • 1/2 cup water
  • Blend cashews, water in high-speed blender until smooth.

Get fancy with your cashew cream and add a little flavour.

Options:

  • Himalayan rock salt, pepper
  • Dill
  • Rosemary
  • Basil (pesto)
  • Garlic
  • Sundried tomato (paste)
  • Olives
  • Chilli
  • Thyme
  • Garlic + anything
  • Pine nuts

Zucchini ‘Pasta’ with Cashew ‘Cream’

  • Shredded Zucchini (Pasta)
  • Fresh basil leaves
  • Sundried tomatoes
  • Pine nuts
  • Kalmata olives halved

In the Cashew cream: (blended)

  • Fine Chopped rosemary
  • Garlic
  • pinch of lemon
  • Rock salt, pepper
